Kalathaki Limnou (Protected Designation of Origin) - Kafaltis Dairy - half

It is a richly flavored cheese, produced exclusively from the milk of goats and sheep from animals that graze freely in the green meadows of Lemnos. This fact combined with the microclimate of the island determines the taste and quality of the milk and gives a special taste to the cheese produced.

The name "basket" comes from the shape the cheese takes, which during its production is placed in woven baskets to drain and then, after dry salting, is stored at room temperature to ripen.
