Melipasto or Melichloro cheese is made from goat and sheep milk. A key stage of its production is its draining, which is done in shady and well-ventilated areas and in periods when the humidity is relatively low, i.e. after the end of spring.
In the first phase, the cheese acquires a texture between green and dry (melichloro), while when the dehydration progresses the cheese becomes hard.
It is ideal for grinding, for saganaki or as a table.
