In 2012, the re-cultivation of chickpeas was started by the Salamousas Agrifood company. It is about the 'Panagia' variety which was cultivated in the village of the same name in Northeast Lemnos in the previous decades.
Lemnos chickpeas are medium in size, while their authentic taste makes them special.
You can try them with rice, as a salad with chopped vegetables, in the oven with peppers and country sausages or make your own homemade hummus!
Don't forget to soak them in water the night before, adding 2 spoons of salt or soda.
